Gingerbread and Brown Sugar Sauce

  • 3 eggs
  • 1 cup light molasses
  • 1 cup salad oil
  • 1 cup white sugar
  • 2 cups gluten free allpurpose flour mix
  • 1 tsp each - cloves, cinnamon, ginger
  • 1/2 tsp salt
  • 2 tsp baking soda dissolved in 1/8 cup warm water
  • 1 cup boiling water

    Combine eggs, molasses, salad oil and sugar in a large bowl and beat well. Sift in flour, spices and salt. Beat well. Add baking soda dissolved in water and mix. Add 1 cup boiling water. beat lightly and quickly. Pour into a 9 x 13 greased pan. Bake 45-50 minutes at 350 degrees. Turn temperature down slightly if using a pyrex pan.

    Brown Sugar Sauce

  • 4 tbsp butter
  • 1 1/2 cup sugar
  • 2 cups boiling water
  • 6 tsp tapioca flour
  • 1 tsp vanilla

    Melt butter in a heavy saucepan. Add the flour until smooth. Add the brown sugar, keep stirring and cook until the sugar becomes a darker brown. Slowly add the water and cook until thick. Add the vanilla.
