This is my favorite recipe. Can you adapt using spelt flour & guar gum as a binder? If so, please advise.

5 c. all-purpose flour
1 1/2 c. instant potatoe flakes
1 tsp. baking powder
1 tsp. salt
1/2 c. cooking oil
2 c. hot water

Also, being unsure whether my family member\'s allergy is to the actual wheat protein OR to the gluten, I would appreciate an adaptation using the spelt flour plus powdered gluten ... would I still add guar gum in this case? What amounts of gluten/guar gum would I use?

Frozen Pastry dough - uncooked

I\'m searching for the ready made dough for pies. I\'ve searched many health food store and Fortino\'s (woodbridge) and cannot find any. In the pass, I obtained them at Fortinos. I need this dough asap. If you can direct me to stores within Thornhill or North Toronto that carries the product, I will follow up with them. Your earliest response is appreaciated.

Blood Test vs Biopsy

I tested positive for celiac disease with a blood test recently but I am in a bit of denial. Have you heard of false positives and do you recommend a small intestine biopsy to confirm the diagnosis?
