This is my favorite recipe. Can you adapt using spelt flour & guar gum as a binder? If so, please advise.

5 c. all-purpose flour
1 1/2 c. instant potatoe flakes
1 tsp. baking powder
1 tsp. salt
1/2 c. cooking oil
2 c. hot water

Also, being unsure whether my family member\'s allergy is to the actual wheat protein OR to the gluten, I would appreciate an adaptation using the spelt flour plus powdered gluten ... would I still add guar gum in this case? What amounts of gluten/guar gum would I use?
