5 c. all-purpose flour Also, being unsure whether my family member\'s allergy is to the actual wheat protein OR to the gluten, I would appreciate an adaptation using the spelt flour plus powdered gluten ... would I still add guar gum in this case? What amounts of gluten/guar gum would I use? Many thanks for your help. Nadine Gazeley
